A unique and festive cake perfect for birthdays, combining the rich flavors of Russian Caravan tea with classic chocolate.
Ingredients
Cake:
- 190g all-purpose flour
- 200g granulated sugar
- 50g unsweetened cocoa powder
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg, at room temperature
- 175ml buttermilk
- 120ml vegetable oil
- 2 tsp vanilla extract
- 175ml hot water infused with Russian Caravan tea
Upside Down Layer:
- 60g unsalted butter
- 150g brown sugar
- 2 tbsp Russian Caravan tea leaves, finely ground
- 1-2 ripe bananas, sliced (optional)
- Fresh cherries or raspberries for garnish (optional)
Directions
- Preheat Oven & Prepare Pan: Preheat to 175°C. Grease and line a 23cm cake pan.
- Prepare the Upside Down Layer: Melt butter, sugar, and tea. Pour into the cake pan. Add banana slices if desired.
- Mix Dry Ingredients: Whisk flour, sugar, cocoa, baking powder, soda, and salt in a large bowl.
- Combine Wet Ingredients: In another bowl, mix egg, buttermilk, oil, vanilla, and tea water.
- Combine Wet and Dry Ingredients: Pour wet ingredients into dry, mixing until just combined.
- Pour Batter into Pan: Over the sugar layer in the pan.
- Bake the Cake: For 35-40 minutes until a toothpick comes out clean.
- Cool and Flip: Cool for 10 minutes, then invert onto a plate.
- Garnish: With cherries or raspberries if desired.
- Serve: Warm or at room temperature, with cream or ice cream.
