Velvet Russian Caravan Upside Down Chocolate Cake

A unique and festive cake perfect for birthdays, combining the rich flavors of Russian Caravan tea with classic chocolate.

Ingredients

Cake:

  • 190g all-purpose flour
  • 200g granulated sugar
  • 50g unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 large egg, at room temperature
  • 175ml buttermilk
  • 120ml vegetable oil
  • 2 tsp vanilla extract
  • 175ml hot water infused with Russian Caravan tea

Upside Down Layer:

  • 60g unsalted butter
  • 150g brown sugar
  • 2 tbsp Russian Caravan tea leaves, finely ground
  • 1-2 ripe bananas, sliced (optional)
  • Fresh cherries or raspberries for garnish (optional)

Directions

  1. Preheat Oven & Prepare Pan: Preheat to 175°C. Grease and line a 23cm cake pan.
  2. Prepare the Upside Down Layer: Melt butter, sugar, and tea. Pour into the cake pan. Add banana slices if desired.
  3. Mix Dry Ingredients: Whisk flour, sugar, cocoa, baking powder, soda, and salt in a large bowl.
  4. Combine Wet Ingredients: In another bowl, mix egg, buttermilk, oil, vanilla, and tea water.
  5. Combine Wet and Dry Ingredients: Pour wet ingredients into dry, mixing until just combined.
  6. Pour Batter into Pan: Over the sugar layer in the pan.
  7. Bake the Cake: For 35-40 minutes until a toothpick comes out clean.
  8. Cool and Flip: Cool for 10 minutes, then invert onto a plate.
  9. Garnish: With cherries or raspberries if desired.
  10. Serve: Warm or at room temperature, with cream or ice cream.
